St Patrick’s Day Breakfast Ideas
We love St. Patricks Day and everything that goes along with this holiday. We go all out decorating the house, tell Irish stories, and my favorite is eating green food.

When I was a kid we use to wake up to our milk-colored green by silly “leprechauns” while we were sleeping. Instead of coloring our food, I like to make healthy St. Patrick’s Day meals for my kids.

Let’s make easy shamrock eggs recipe!
Shamrock Eggs are the perfect quick way to get both veggies and protein into my kid’s tummy at the beginning of the day.
Shamrock Eggs ingredients
- Green bell pepper
- Eggs
- 2-3 Tablespoons cooking oil or spray (we used coconut oil)
- 2-3 Tablespoons water, optional (read note in directions)
- Cheese slices, optional
Directions to Make Shamrock Eggs
Step 1
First, using a sharp knife slice the bell pepper into 1/4 inch thick circles.
- If you want to make four-leaf clovers, then when picking out your bell peppers turn them upside down and check the bottoms.
- If they have four bumps on the bottom, then they should have four sections inside. Most will have three to four sections.
Step 2
Next, heat your cooking oil over medium-low heat in a medium skillet.
Step 3
Place 2-3 bell pepper slices into the skillet and cook for about 30 seconds, then flip over and cook another 30 seconds before immediately proceeding to the next step.
Step 4
Now take an egg and carefully break it and empty the contents into the center of one of the cooking bell pepper slices. Repeat for each bell pepper you are cooking.
Step 5
Let the eggs cook inside the bell pepper rings.
Tip: Place 2-3 Tablespoons of water into the skillet and immediately cover with a well-fitting lid to allow the eggs to steam. Although this step is not necessary, it will steam the top of the eggs so they cook at about the same rate at the bottoms of the eggs so you won’t have to flip the shamrock eggs. Alternatively, using a spatula, flip the eggs.
Step 6
Once the eggs are cooked to your preference, top each Shamrock Egg with a cheese slice, if desired.
I turn off the heat at this point and cover my Shamrock Eggs in the skillet with a lid to melt the cheese.
Step 7
Once the cheese is melted, remove the cooked shamrock egg from the skillet with a spatula.
Step 8
Finally, serve our Shamrock Eggs recipe with juice and fruit or toast for a complete kids’ breakfast.
